Garlic's Unexpected Gems

Some of the best garden discoveries are made by accident. Last fall a friend gave my husband and me some family heirloom garlic. Against the standard advice, he hadn't removed the flower stems, known as scapes, when they appeared, and when he harvested he pulled up the whole plants -- bulbs, stems and flower heads. Inside the flower heads were tiny bulbils (above-ground bulbs) the size of rice grains. We broke apart the regular garlic bulbs at the base of the plants and poked the individual cloves into the ground the way you normally would plant fall garlic. On a whim, we also planted those tiny bulbils, one by one, just to see what would happen.
What we expected to find, come spring, was green garlic, a tasty scallion-like treat you get by planting any small garlic cloves you think aren't big enough to make full-sized heads. But the green shoots the bulbils sent up were so spindly they weren't worth eating, so we let them grow through the summer.

The Best Nutrition is Natural

Nature's gifts come in fancy wrapping. "Look at me!" the tomato shouts. "I'm red, I'm sweet, I'm juicy." The banana makes no less flashy a pitch: "Check out my E-Z-Peel skin!" It's a marketing strategy designed to lure creatures to eat fruits and thereby disperse their seeds.
You wouldn't think these goodies needed help selling themselves to us, but advertising by the ultra-processed food industry is a big distraction. Even recent boosts from science, trumpeting the nutritional value of fruits, vegetables and whole grains, seem to derail nature's mission. No sooner do we learn that a plant food is a package rich in disease-fighting antioxidants than somebody tries to take that complex package apart. Witness the beta carotene debacle of the '90s. On the strength that beta carotene, found especially in bright orange foods, might protect us from diseases such as cancer, suddenly beta carotene supplements were hot-selling items. Then studies found that the supplements might cause cancer instead. The conclusion: Get your beta carotene from carrots.
That's the central message of Michael Pollan's latest book, "In Defense of Food." In his usual clear, hit-the-nail-on-the-head style, Pollan traces our country's sorry journey to a less healthful diet, and he offers good, simple solutions -- the most noteworthy of which is to "eat food." Real food, that is, not a collection of cheap, dubious makeshifts assembled in a lab. Basic to his argument is the idea of food synergy, that a food "is more than the sum of its nutrient parts."
The trend toward medicalizing vegetables (breeding them to be higher in the flavonoid of the month) is perhaps better intentioned than turning food into pills, but to my mind it still smacks of what Pollan calls "nutritionism." Is it necessary to pack extra lycopene into a tomato and more carotene into a carrot, or vice versa? If you eat a diet rich in lots of different fruits and vegetables, grown organically and picked fresh, you will get all the nutrients you need.
One of Pollan's maxims is to choose food at the edges of the supermarket if you must shop there at all. The center aisles are a swirling nucleus of ever-changing fake foods with unpronounceable ingredients. Pick up something from the outer walls instead: an honest red cabbage or a fat beet. Then break through those walls to the fields and gardens beyond.
Granted, February is not the garden's best season, but in my pantry there are red paste tomatoes that I put up in summer, pink applesauce I made in fall, and even, in the cold greenhouse, a few last sweet winter carrots. And that's what I'll serve my valentine.

Global food crisis looms as climate change and population growth strip fertile land

Climate change and an increasing population could trigger a global food crisis in the next half century as countries struggle for fertile land to grow crops and rear animals, scientists warned yesterday.
To keep up with the growth in human population, more food will have to be produced worldwide over the next 50 years than has been during the past 10,000 years combined, the experts said.
But in many countries a combination of poor farming practices and deforestation will be exacerbated by climate change to steadily degrade soil fertility, leaving vast areas unsuitable for crops or grazing.
Competition over sparse resources may lead to conflicts and environmental destruction, the scientists fear.
The warnings came as researchers from around the world convened at a UN-backed forum in Iceland on sustainable development to address the organisation's millennium development goals to halve hunger and extreme poverty by 2015.

Vegetables That Cut to the Quick

As a gardening cook, I always say that flavor is everything, but my evil twin, the lazy cook, knows otherwise. Sometimes I just want vegetables that are easy to slice.
Cooking is all about cutting things up, and a cylindrical variety that yields uniform slices -- quick to do, tidy on the plate -- is what I reach for on a busy day. I'll choose a long, slender beet such as Forono over a round one. I'll grab tapered radishes such as red-and-white D'Avignon, or a daikon, to slice for salad. I might even forgo my favorite Brandywine tomato (delicious but a bit lumpy) in favor of a paste type that makes quick, round disks. I'll skip the flying-saucer-shaped pattypan squash and reach for zucchini. Chop, chop. Pattypans, like round tomatoes, are great for stuffing. But stuff anything on a day when there's 10 for lunch? Not a chance.
