50 Ways to reduce your carbon footprint

We know from singer songwriter, Paul Simon, that there are 50 ways to leave your lover, but did you know that there also 50 ways to leave your carbon-wasting ways? The Metro Silicon Valley News has recently published a helpful list of 50 things we can do to reduce our carbon footprint. Remarkably, 10 out of the 50 had a connection to food, drink and gardening. Maybe it's time we all found a new plan.
26. READ LABELS AND BUY LOCAL. Organic from Canada or overseas isn't as easy on the environment as locally produced products. Buying anything imported across an ocean means a container ship transported it. "Just one container ship traveling one mile produces NOx emissions equaling 25,000 cars traveling the same distance," says Anthony Fournier of the Santa Barbara County Pollution Control District. Foreign manufacturers often use carbon-intensive industrial and environmental practices that are illegal here. Many imports are made in sweatshops where people labor in dangerous work environments and aren't paid fairly. Reducing the demand for imports not only reduces our carbon footprint but also sends a message to big business that we want better for everyone.
34. BECOME A LOCAVORE. When you choose out of season organic food that's from journeyed overseas instead of locally grown anything, the pollution caused by the container ships outweighs any benefit you're going to get. Locavores say eating what's available locally is healthier anyway. Cooking dinner? Make a few meals at the same time and stash them in the fridge.
35. SUPPORT YOUR LOCAL FARMER. Visit www.localharvest .org and find the farmers market nearest you. Even better, find a CSA and get your produce from a sustainable local family farm.
36. MAKE YOUR OWN SALAD. Live Earth Farm's Debbie Palmer says make your own organic salad mixes from scratch and use less bagged and precut produce because they use a lot of resources to produce.
37. DON'T BE A SLAVE TO CONVENIENCE. We'll all be paying later for using convenience foods like packaged mixed salads, because they use a lot of resources to produce.
38. AVOID FAST FOOD. Methane-producing factory farming and long-distance shipping are the heart of its business model and they're clear-cutting rain forests to graze their cows.
39. EAT LESS MEAT. Especially beef. The Worldwatch Institute says growing numbers of intensively farmed livestock are responsible for 18 percent of global greenhouse gas emissions and account for 37 percent of emissions of methane, which has more than 20 times the global warming potential of CO2, and 65 percent of emissions of nitrous oxide, another powerful greenhouse gas, coming from manure.
41. GREEN COFFEE IS DELICIOUS. Barefoot Coffee Roasters' Andy Newbom says that when you buy fair trade or organic coffee you're supporting sustainable farming practices that don't clear-cut trees or use pesticides or chemical fertilizers and that makes a big difference. "Buying fair trade coffee rewards and supports sustainable farming, reducing developing nations' carbon footprint," he says. "It's easy for the first world to say let's reduce our carbon footprint, but it's harder for farmers in developing countries to do this." Buy fair trade beans whole or ground, get a press or cloth filter and make your own.
42. DISPOSABLE CUPS? Really? Do the math: Buying coffee every day in a disposable cup generates at least 20 pounds of paper a year plus several hundred megaindustrially produced plastic covers. Styrofoam cups are worse. Dr. Theo Colborn, in "Our Stolen Future," says researchers have found traces of polystyrene in 100 percent of human tissue tested, because it migrates from the cup into hot food and beverages. Yuk! Bring your own coffee cup!
47. YOUR GARDEN ISN'T AS GREEN AS YOU THINK. Alrie Middlebrook designs and builds native plant gardens locally. She says take out your water-guzzling lawn and replace it with native plants. They use less water and nourish birds and bees.

Scientists point to cause of bee colony collapse

The sudden and mysterious disappearance of honeybees in the United States over the past year may be due to a virus, according to a new research paper by an international team of scientists.
The pathogen, called Israeli acute paralysis virus, was detected in almost all bee hives tested during a survey of hives afflicted by what has become known as colony collapse disorder. The pathogen is rarely found in healthy hives.
The discovery will likely help put to rest rampant speculation about the source of the strange collapse in U.S. bee populations.
Any threat to bee numbers could affect the global food supply. An estimated $2-billion worth of crops in Canada depend on honeybees for pollination, and about $15-billion in the United States, where the collapse has already led to difficulties in pollinating crops.
The researchers also found the virus on live bees imported into the United States from Australia, and in royal jelly samples from China. Royal jelly is the food bees produce for queens, but it is also sold as a health food for humans.
The discovery of the virus has raised speculation that the United States inadvertently allowed it into the country through the import of Australian bees. This was allowed in 2004, at the urging of the agricultural industry, to boost the number of hives available for pollinating high-value crops such as almonds. The import of the bees coincided with the first reports of unusual problems in bee colonies.

Building tomato cages

First of all -- lets get this straight!!! There is absolutely only one correct way to raise tomatoes! (And that is whatever method works for you.) I have used stakes, trellises, store-bought cages, 'post and weave', and homemade cages. The latter has worked best for me and allows me the greatest production in the smallest area. The disadvantage is cost, construction time, and required storage space.
I like tomato cages! Concrete remesh can be found at most major consumer lumberyards. It comes in 50’ and 150' rolls. The wire is very strong and can be difficult to handle. Three essential tools are a small pair of bolt cutters, a large pair of slip-joint pliers, and a screwdriver type nut-driver with an interior hollow shaft diameter just slightly larger than the diameter of the remesh wire. There is variation in the rigidity of remesh – choose accordingly; stiffer wire is stronger but harder to bend.

Chocolate Zucchini Cake recipe

Do you think you'll die if you see another zucchini? Well then here's a recipe to die for. The photographer made hers in a Bundt pan, but the recipe below suggest a 13 x 9 baking pan. Either way, you're going to love this cake. Before you know it, you'll be out in the garden pulling back leaves looking for one or two zucchini for another batch.
Ingredients
2 1/4 cups sifted all purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 3/4 cups sugar
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1/2 cup buttermilk
2 cups grated unpeeled zucchini (about 2 1/2 medium)
1 6-ounce package (about 1 cup) semisweet chocolate chips
3/4 cup chopped walnuts
Procedure:
Preheat oven to 325°F. Butter and flour 13 x 9 x 2-inch baking pan. Sift flour, cocoa powder, baking soda and salt into medium bowl. Beat sugar, butter and oil in large bowl until well blended. Add eggs 1 at a time, beating well after each addition. Beat in vanilla extract. Mix in dry ingredients alternately with buttermilk in 3 additions each. Mix in grated zucchini. Pour batter into prepared pan. Sprinkle chocolate chips and nuts over.
Bake cake until tester inserted into center comes out clean, about 50 minutes. Cool cake completely in pan.
Serves 12.

The Best Nutrition is Natural

Nature's gifts come in fancy wrapping. "Look at me!" the tomato shouts. "I'm red, I'm sweet, I'm juicy." The banana makes no less flashy a pitch: "Check out my E-Z-Peel skin!" It's a marketing strategy designed to lure creatures to eat fruits and thereby disperse their seeds.
You wouldn't think these goodies needed help selling themselves to us, but advertising by the ultra-processed food industry is a big distraction. Even recent boosts from science, trumpeting the nutritional value of fruits, vegetables and whole grains, seem to derail nature's mission. No sooner do we learn that a plant food is a package rich in disease-fighting antioxidants than somebody tries to take that complex package apart. Witness the beta carotene debacle of the '90s. On the strength that beta carotene, found especially in bright orange foods, might protect us from diseases such as cancer, suddenly beta carotene supplements were hot-selling items. Then studies found that the supplements might cause cancer instead. The conclusion: Get your beta carotene from carrots.
That's the central message of Michael Pollan's latest book, "In Defense of Food." In his usual clear, hit-the-nail-on-the-head style, Pollan traces our country's sorry journey to a less healthful diet, and he offers good, simple solutions -- the most noteworthy of which is to "eat food." Real food, that is, not a collection of cheap, dubious makeshifts assembled in a lab. Basic to his argument is the idea of food synergy, that a food "is more than the sum of its nutrient parts."
The trend toward medicalizing vegetables (breeding them to be higher in the flavonoid of the month) is perhaps better intentioned than turning food into pills, but to my mind it still smacks of what Pollan calls "nutritionism." Is it necessary to pack extra lycopene into a tomato and more carotene into a carrot, or vice versa? If you eat a diet rich in lots of different fruits and vegetables, grown organically and picked fresh, you will get all the nutrients you need.
One of Pollan's maxims is to choose food at the edges of the supermarket if you must shop there at all. The center aisles are a swirling nucleus of ever-changing fake foods with unpronounceable ingredients. Pick up something from the outer walls instead: an honest red cabbage or a fat beet. Then break through those walls to the fields and gardens beyond.
Granted, February is not the garden's best season, but in my pantry there are red paste tomatoes that I put up in summer, pink applesauce I made in fall, and even, in the cold greenhouse, a few last sweet winter carrots. And that's what I'll serve my valentine.
